This gooey butter cake is one of the most delicious things I’ve ever made. Just a little word of warning – this cake is very rich, so a little bit goes a long way. I made the mistake of serving what I thought were normal sized pieces to my brothers, and they could barely finish it.
Ooey Gooey Butter Cake (from scratch!)
Ingredients:
For the base:
3 cups flour
1 1/2 cups granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 eggs
12 tablespoons melted butter
For the top:
8 oz cream cheese
3 eggs
1 teaspoon vanilla
3 cups powdered sugar
Preheat oven to 350˚F. Grease a 9×13 inch baking pan.
Add all of the ingredients for the base into a bowl and mix until combined. Press mixture into the bottom of the prepared pan.
In a medium bowl, beat together the cream cheese, eggs, and vanilla. Slowly add in the powdered sugar, 1 cup at a time while mixing to ensure that the powdered sugar doesn’t puff up and go all over the counter. Mix until light and fluffy (about 3 minutes).
Bake for 35-45 minutes or until the cake is golden brown around the edges. The cream cheese part of the cake shouldn’t be completely set.
Let cool for 30 minutes before serving. Enjoy!
